Balinese Tuna Satay


I had visited Bali once. But i could not remember if i had tasted the traditional Balinese cuisine or not. I was still ten years old back then and a picky eater.
Come to think of it, because i was such a picky eater, i lost many culinary experience opportunities when i was a little girl. But hey! I’ve grown up now and i like many kind of dishes. I like to taste it and love to cook it! 😀

Sate Lilit is one of the most famous Balinese cuisine. It’s a sort of tuna satay, using minced spiced tongkol (a kind of tuna) wrap around a lemongrass stick.

They always put Sambal Matah with the satay. Sambal matah is traditional Bali’s sambal that’s easy to make but so good to taste.

My friend, well actually my husband’s friend which became my friend through social network, posted the recipe in her blog. I wrote it down and tried to make it couple months ago. 
Ingredients:
  • 1 / 2 pounds of tuna, separate from the bones, take the meat and finely chopped
  • 1/2 coconut, grated
  • 3 tablespoon coconut milk
  • 20 stems of lemongrass or wood sticks
  • 2 tablespoons lime juice
  • 4 spring onions, fried
  • 6 cayenne pepper (if you like it spicy), fried

Grind:

  • 3 cloves garlic
  • 5 cloves shallots
  • 2 cm ginger
  • 1 / 2 teaspoon fried shrimp paste
  • 1 tablespoon brown sugar
  • 1 teaspoon salt

Method:

  1. Mix the fish meat, paste spices, fried and pepper friend, shredded coconut, coconut milk, and lime juice
  2. Use your hand to mix it for better results
  3. Wrap the dough on lemongrass or skewers
  4. Grilled / roast over medium heat until cooked
  5. Serve
